The Franciacorta Vintage Collection Extra Brut by Cà del Bosco is made with a careful selection of the best Pinot Nero, Chardonnay and Pinot Bianco grapes coming from 26 certified organic vineyards. The freshly hand-picked grapes are first classified and cooled. This is followed by the washing and hydromassage of the bunches, which are then pressed in the absence of oxygen and left to ferment in small oak barrels. 7 months after the harvest, the cuvèe is made and it is left to age on its lees for at least 48 months, giving life to a rich and complex, powerful and noble Franciacorta wine. At sight it has a beautiful straw yellow color with golden reflections, accompanied by a fine and persistent perlage. The nose develops an ample and elegant bouquet, characterized by a pleasant aromatic complexity and hints of dried fruit, in addition to notes of yeast and dry pastries. On the palate it is full-bodied and elegant, pleasantly savory and persistent. Endowed with an excellent aging potential, the Franciacorta Vintage Collection Extra Brut Cà del Bosco is perfect if paired with important fish-based dishes.
