Description

Produced by Cavalleri winery, the "Au Contraire" spumante is an excellent and extraordinary cuvée composed by Chardonnay (60%) and Pinot Noir (40%). Since the 7th grape harvest after 2001, this sparkling wine is produced  with selected grapes, left 72 month on its own yeast and dégorgé without adding liqueur and sugar. With a great straw yellow colour, it is characterized by fine and persistent bubbles. The sense of smell is fresh, with refined and fruity aroma that are well balanced with scents of yeast and crust of bread. Crispy and strong in the mouth, it is characterized by a good structure and a pleasant freshness. We can foresee that in the course of the time this spumante will evolve and improve its characteristics, perfect in combination with fish and shellfish.


The Franciacorta "Au contraire" by Cavalleri  is a sparkling wine of extraordinary excellence, through which the company wishes to tell an upside-down story. The peculiarity of this edition is that it is produced exclusively with Pinot Noir grapes, vinified in steel. This wine ages ten years of on the lees and it is disgorged without the addition of liqueur and sugar. It shows a beautiful bright straw yellow color and fine, persistent bubbles. The nose is fresh, with elegant and fruity aromas, well harmonized with hints of yeast and bread crust. In the mouth it is intense and crunchy, with a good structure and pleasant freshness.The Franciacorta "Au contraire" by Cavalleri is a wine that will improve and evolve over time, perfect to be tasted in combination with important dishes based on fish, crustaceans and molluscs.
