The Alta Langa Pas Dosé by Rizzi was produced for the first time in 2013. This sparkling wine is made with 85% Chardonnay grapes and 15% Pinot Noir grapes grown in own vineyards at a height above sea level between 270 and 430 meters. After an initial fermentation in steel under controlled temperature, the wine rests in steel for about 7/8 months with repeated batonnages; then it is bottled for the second fermentation according to the classic method. After an aging of at least 30 months in bottle on its lees, the disgorgement is made without the addition of sugar dosage. At sight it shows a beautiful bright straw yellow color and a fine and persistent perlage. The nose reveals a large and fragrant bouquet, floral and fruity, with notes of grapefruit and citrus, mango, peach and white flowers. In the mouth, it is fresh and sapid, mineral and full-bodied. The Alta Langa Pas Dosè by Rizzi is perfect to drink chilled as an aperitif or in combination with fish and vegetable appetizers
