Description

The Barolo of Paolo Scavino is a harmonious and complex red wine, made with Nebbiolo grapes coming from the best plots of seven crus. The berries ferment separately according to the parcel of origin; then the wine is aged: the wine obtained from each cru rests for 10 months in barrique and for another 12 months in large casks of different capacities. The final assembly takes place in the cellar and it varies depending on the vintage. The result is a wine that synthesizes the peculiarities of every cru, which expresses complex and stratified sensations into the nose, where the ripe red fruit alternates with more spicy sensations and aromas of the undergrowth. The taste is very structured, powerful, characterized by a sip with a pleasant freshness, which flows to the palate with harmony. With soft tannins and a long and persistent finish, the Barolo of Paolo Scavino is perfect to drink in combination with red meats and aged cheeses.

This cave was founded by Lorenzo Scavino and his son Paolo in 1921 in Castiglione Falletto. The winery counts about 23 hectares of vineyards, that allow the cave to sell 120000 bottles every year.
