The Chardonnay Eléve en fût de chène of Anselmet is a wine to try absolutely, produced with grapes grown in only two vineyards in Villeneuve and Saint Pierre, in Valle d'Aosta region. After manual harvesting, the grapes ferment in French oak barrel. After a period of aging of 6-8 months in the same barrel, you get a Chardonnay complex and intriguing, with a nice intense golden yellow color. Its bouquet is composite, floral and fruity, with hints of chamomile and acacia flowers. The taste is elegant and soft, mineral, with a nice acidity and a fresh and satisfying ending. This Chardonnay is perfect to drink with starter or first courses based on fish, but is also great if drunk with blue cheeses.
