The Chablis 1er Cru Vaillons by Jean Paul and Benoit Droin is a high-quality white wine exclusively made from Chardonnay grapes sourced from selected vineyards within the Vaillons cru, one of the most prestigious terroirs of Chablis. Specifically, it's a blend of 5 different "climats": Epinottes, Roncières, Séchet, Chatains, and Beugnons. Thanks to the limestone-rich soil and minerals, this wine is characterized by pronounced minerality and complexity, combined with unique elegance and refinement. In appearance, it displays a bright straw yellow color with greenish reflections. On the nose, it offers a complex and enveloping aromatic bouquet, with hints of citrus, green apple, and peach, accompanied by delicate floral notes and a subtle mineral undertone. With aging, the floral notes evolve into tertiary aromas, with hints of menthol and oyster shell. On the palate, it is fresh, vibrant, and well-balanced, with a pleasant acidity that adds liveliness to the sip. The structure is elegant and refined, with a lingering taste that invites enjoyment sip after sip. Thanks to its versatility and complexity, it pairs perfectly with a wide range of dishes, from seafood appetizers to white meat-based dishes and medium-aged cheeses.
