Farfalla Zero Dosage by Ballabio is an elegant Metodo Classico sparkling wine, characterized by its absence of final dosage, meaning it is produced without the addition of liqueur d’expédition. This wine, made with pure Pinot Noir grapes, cultivated in the historic vineyards of the estate at over 400 meters above sea level on predominantly limestone soil. It stands out for its purity and essence, expressing the characteristics of the Oltrepò Pavese terroir at its best. After careful selection of the grapes and gentle pressing, the must ferments and matures on its own yeasts in stainless steel tanks, preserving the freshness and integrity of the fruit. The cuvée assembly is done with care, using about 35% reserve wines from the same vineyards alongside the vintage wines. Farfalla Pas Dosé by Ballabio presents itself with a bright straw yellow color and delicate, persistent perlage. On the nose, it impresses with its complex and enveloping bouquet, with notes of bread crust and yeast, complemented by delicately floral and fruity hints. On the palate, it is vibrant and fresh, with pleasant acidity and a subtle minerality that provides depth and persistence.
