The property, that is collocated in the area of Nieva in the province of Segovia, includes 17 hectares of old vineyards, which go back to 110 and 200 years ago. The wine makers of this cave are convinced that it is necessary to have first matters in order to produce a good wine: so the wine makers engage in employ procedures of biological agriculture, that they call ‘ (bio) Logical Agriculture’. They use only organic fertilizers, that are obtained by vegetal essences like chamomile, sage and nettle. In the cave, as in the vineyard, they use any kind of commercial yeasts, because they unify the style of all the wines that use them: for this reason the wine makers use only natural yeasts, which derives from grapes’ peels.
